I would recommend anything other than NOOBS, and having control via a mobile with AVNC (the app) is good

You can make it so the Pi starts a hostapd so the phone connects to it, or make it so the Pi connects to the phone via its hotspot or something, then you can simply just power it and everything will power on automatically, it's really great to have such control without anything other than the usual stuff

Raspian is nice for beginners, and anything else which is not officially supported is great but needs sometime, so it's better to just start with Raspian and get Windows emulator to start Fortnite, if it doesn't support Linux yet

Water cooling isn't necessarily a good option, especially that it's water, and needs more continuous power to circulate, a simple heat sink and well positioned cooling fans will be more than enough

But if you're living on water, then yes do that, you can simply cover the main rig in copper and just put it in and it'll be better than any cooling system, because it'll cool without spending a penny, unless if you considered 1 time copper cover and piping purchase is too expensive
