Hello there. First time installing/using PiHole and i cant seem it get it to work. i Got it all installed and im in the GUI but im lost from here. not sure how to tell the devices to use the pis DNS. or even better if i could the router. any help would be awsome

first do you have a static IP?

There are two ways.
1. In the network you probably have a DHCP server (probably in your "router") and that is offering IP addresses and DNS server configuration to your devices.
So if you change the DNS server in your DHCP server to the IP of your PiHole then will every device get the new configuration.
Note the new configuration will be active after that the DHCP lease time has expired or that you force a new configuration and that depends on the device OS.
2. You can manually specify the DNS server in each device. I don't recommend this more than for testing.

With dd you can copy the SD card 1:1 to a USB stick.
However, the USB stick should be slightly larger than the SD card.
I don't know the exact values, but I'm sure Oops.se knows them. Or you can have a look on the Internet.

Do not copy and paste! This is different. With dd, every single bit is copied, which is important because things that are otherwise not visible to us are also copied.
Since I don't use clone programs, I can't say if it's the same. And whether your program really copies everything important, such as partition tables, I can't say either. Just try it, you can delete the USB stick at any time.
Everything on the SD card consists of millions of bits.
And dd copies every single one of these bits exactly 1:1.
It's best to wait for Oops, he can certainly explain this to you better or look up "copy operating system with dd" on the Internet.

With Windows, Linux and Android, you can set DNS in the device. However, you should enter an alternative DNS in case your Pi is unavailable.
